Eggplant Crispies.
Very easy to make and my personal favorites, eggplant
crispies are sure to be a hit among your girl gang or in your home parties.
Even as an appetizer, it is a great treat.
To prepare eggplant crispies or "baigan pakoda" as
it is known in India, you need:
§
One eggplant.
§
Half cup gram flour.
§
1/4 teaspoon red chili powder.
§
Half teaspoon coriander powder.
§
Half teaspoon lemon juice.
§
Salt to taste.
§
Water for batter.
§
Oil for frying.
(Serves One)
Wash eggplant and cut it into vertical, round and thin
slices. Cover and keep aside.
In a pan, heat oil for deep frying. Mustard oil is preferred
but you can use any oil of your choice.
In a bowl, take gram flour and add to it red chili powder,
coriander powder, lemon juice and salt. Add water to make a thin batter.
Make sure oil is amply hot. take one slice of eggplant, dip
it into the batter and put it in hot oil for frying. Make sure the batter just
lightly coats the slices. Fry till both sides are golden brown in color and
then remove in a plate. Repeat with all the slices.
Serve hot with ketchup or any of your favorite hot sauce.
P.S. You can use potato slices as well as per your liking.

Grilled
Cottage Cheese Roll.
Very easy to make. All you need is:
§
A big cube of cottage cheese, cut in small cubes
of equal size.
§
2 cups wheat Flour ( all purpose or regular).
§
Oil for dough and grilling.
§
One small onion, chopped.
§
One small capsicum, diced. (Take any color you
like: more colorful, more beautiful).
§
1/2 teaspoon red chili powder.
§
3/4 teaspoon coriander powder.
§
Any hot sauce of your choice.
§
salt to taste.
( Serves Four)
Make a dough with flour, water and 1and a half tablespoons
of oil. Make as many roundels as possible of two inch diameter. Flatten with a
rolling pin and dry bake on a pan over medium heat. Cook on both sides. Dough
should not be raw.
In another pan, heat some oil. Put in onions and after
sautéing them for a while, put in red chili powder and coriander powder. Add
diced capsicum and cubed cottage cheese. Cook some more and then remove from
heat.
Take the baked roundels which are just like tortillas.
Spread a layer of your favorite hot sauce over it and put on our sautéed
cottage cheese along the length of tortilla in the middle. Fold it completely
and then grill on a griller on both sides.
Your grilled cottage cheese rolls are ready. Serve hot as
whole or cut in half and serve.
